Indian Chicken Korma


ingredients
  • 1/4 cup cashews
  • 1/2 cup coconut milk
  • 1/2 cup cream
  • 200gr greek yogurt
  • 3 Tbsp olive oil
  • 2 onion, chopped
  • 2 Tbsp ginger, chopped
  • 3 cloves garlic, chopped
  • 500gr chicken in pieces
  • 2 Tbsp coriander
  • 2 Tbsp cumin
  • 1 tsp turmeric
  • 1 tsp sweet paprika
  • 1 tsp sugar
  • 1/8 tsp cardamon
  • 1 tsp salt
  • 240gr tomato sauce
  • 1/2 cup water


instructions
Blend cashews, coconut milk, cream until smooth. Mix in greek yogurt and set aside.
Heat olive oil and saute onions, ginger and garlic.
Add chicken bites, spices, salt and saute all sides of chicken pieces. If spices stick on the pan, add some water.
When chicken is ready, add tomatoes and water. Simmer for 10-15 minutes.
Set aside and add cashew mixture. Simmer for 15 minutes until sauce thickens.
Serve over basmati rice and garnish with fresh coriander or parsley.
