ingredients for 25-30 cheese pies
- 250ml semi skimmed milk
- 3 Tbsp butter
- 3 Tbsp flour
- 1 Tbsp semolina flour
- 300gr feta cheese, crumbled
- 200gr kaseri cheese (sheep and goat's milk cheese),grated
- 100gr graviera cheese, grated
- 12 sheets phyllo dough
- olive oil for frying
Heat milk with butter over low heat until it melts. Add flour and semolina flour and whisk until it thickens. Add the cheeses and pepper and mix with a spoon until they melt.
Remove from heat.
Cut phyllo dough in 6 strips. Take 2 strips and add one tablespoon of the cheese mixture in the right corner. Fold the cheese over the dough making a triangle. Continue rolling it over like in the picture.
Cover phyllo that you are not using with a damp towel to prevent them from drying.
Heat olive oil and fry the cheese pies both sides.
Place them in a plate with paper towel to drain excess olive oil.
