Whole wheat penne with spinach and greek yogurt


ingredients
  • 500gr whole wheat penne
  • 2 leeks, finely chopped
  • 3 cloves galic, finely chopped
  • 3-4 Tbsp olive oil
  • 450gr spinach, frozen
  • 1 tsp salt
  • 1 shot glass white wine
  • 200gr greek yogurt
  • 100gr parmesan cheese, grated
  • freshly ground pepper


instructions
Prepare pasta following the directions of the box.
In a large pan heat the olive oil and cook the leeks and garlic cloves until transparent.
Add the spinach and continue to cook until thawed.
Add the white wine, salt and pepper and cook for approximately 10 minutes in medium heat.
Mix in the yogurt and parmesan cheese.
Add the drained pasta and mix well.
Serve with freshly ground pepper.
