Buckwheat Pancakes with Blueberries

ingredients for 12 pancakes 

  • 1 cup buckwheat flour
  • 1 tsp baking powder
  • 1/4 tsp soda
  • a pinch of salt
  • 1 tsp cinnamon
  • 1 cup buttermilk
  • 1 egg
  • 1 Tbsp honey
  • 2 Tbsp melted butter
  • 1/2 tsp vanilla extract
  • 1/2 cup blueberries frozen
  • 3-4 Tbsp butter for cooking

In a large bowl, whisk together the buckwkeat flour, baking powder, soda, salt and cinnamon.
Add buttermilk, egg, honey, melted butter, vanilla and mix until combined.
Put a pan over medium heat and melt 1 Tbsp butter. 
Add 4 times half cup from the batter.

Drop some blueberries and cook for 1-2 minutes.
When small bubbles start to form on the top of the pancakes, flip them to other side and cook for 1-2 minutes.
Transfer the pancakes in a plate, melt 1 Tbsp butter and continue with the rest of the batter.
Drizzle with honey or jam and serve with fresh fruits!
