- 1/2 kilo zucchini
- 1/2 cup dry bread crumbs
- 100gr parmesan cheese, grated
- 50gr flour
- 1/2 tsp smoked paprika
- 2 eggs
Preheat oven to 220C.
Wash zucchini and cut them in 4 sticks. Put them in a colander, sprinkle with salt and leave them aside to prepare the rest of the ingredients.
In a bowl combine breadcrumbs, parmesan cheese, flour, smoked paprika and pepper.
In another bowl, beat eggs.
Line a pan with parchment paper.
Use tongs to dip zucchini sticks into eggs, then into parmesan mixture.
Transfer to the pan and continue with the rest of the zucchini sticks.
Bake at 220C for 15-20 minutes until golden brown.
Make a dip with greek yogurt, fresh herbs, lemon juice and chopped olives to serve with zucchini sticks.
