- 3 calamari (squids) 750gr
- 3-4 leeks
- 200gr celery root
- 1 small bunch swiss chard
- 1 small bunch fennel
- 3/4 cup olive oil
- juice from 2 lemons
- 1 Tbsp sumac spice
Clean calamari and cut them into thick rings.
Cut the celery roots in medium size pieces and the leeks into rings.
Cut the swiss chard and finely chop fennel.
In a baking pan add leeks, celery root, swiss chard and fennel.
Season with salt, pepper and sumak. Lightly toss to mix.
Add calamari rings, season with salt and pepper and pour over olive oil and lemon juice.
Bake in a preheated oven at 200C for 40-50 minutes.
