Marinated fresh anchovies - Greek Recipe


ingredients
  • 1/2  kilo fresh anchovies
  • 4 Tbs fresh parsley,chopped
  • 5-6 cloves garlic, chopped
  • chilly pepper, chopped (optional)
  • 1 tsp salt
  • balsamic white vinegar
  • 1/2 cup olive oil

instructions
Remove heads and spines from the anchovies.
Rinse them and drain them well.
Arrange a layer of the anchovies  in a deep dish and sprinkle with  half the parsley, 2-3 cloves garlic, chilly pepper and 1/2 tsp salt.

Continue with another layer of fish and the rest of the aromatics.
Cover the anchovies with vinegar and pour on top the olive oil.

Cover the dish and marinate in the fridge for 3-4 hours or overnight... it depends on how ''cooked'' you want it!!!
