Baked Mackerels with Mustard


  • 2 macherels
  • 3 bell peppers
  • 1 onion
  • 2-3 cloves garlic
  • 2 Tbsp dijon mustard
  • 2 sprigs fresh thyme
  • 1/2 cup white wine
  • juice of 1 lemon
  • olive oil
  • salt 
  • pepper

Preheat oven to 200C.
Remove heads and entrails from the mackerels.
Cut peppers and onion in slices.
Finely chop garlic.
Add peppers, onions and garlic in a pan.
Drizzle with white wine and lemon juice.
Spread mustard all over the mackerels and stuff with a sprig of thyme.
Arrange the mackerels over the vegetables and drizzle with olive oil.

Season with salt and pepper and bake for 40 minutes.
