1 kilo fresh apricots
2 fresh peaches
2 star anise
1 tsp fresh ginger grated
zest from 1 lime
1 Tbs lime juice
Rinse the apricots well under cold water and remove the pits with your fingers.
Wash the peaches, remove the pits and cut them to pieces.
Put the fruits in a pot with the sugar.
Cover them and let them rest for 4-5 hours until the sugar melts and becomes like syrup.
Add the star anise and ginger and bring to a boil, reduce and simmer for 45-60 min.
It will start to foam. Stir occasionally to prevent the marmalade from sticking and burning.
In less than an hour, the marmalade is ready. Check with the spoon if it is like jelly .
Add the zest and juice and stir.
Let the marmalade to cool completely and put it in two small jars.
