- 1 whole chicken
- 40 cloves of garlic
- fresh thyme
- fresh rosemary
- fresh oregano
- 2 bay leaves
- 3/4 cup olive oil
Preheat oven to 200C.
Season chicken with salt and pepper and put it in a baking pan.
Add garlic cloves, rosemary, thyme, oregano and bay leaves around the chicken.
Pour the olive oil over the chicken and cloves.
Wet a big piece of parchment paper and cover the chicken.
Top with 1 or 2 big pieces of aluminium foil to cover very well.
Bake for 1 hour and 40 minutes at 200C.
Uncover and broil until chicken is brown.
Serve a portion of chicken with some garlic cloves.
Roasting garlic with olive oil turns it soft, sweet, with delicious smell. Perfect for spreading on a piece of baguette!
