Delicious cheese pies with parmesan cheese!
With this recipe i am taking part in the Parmigiano Reggiano CrossCooKING 2014, an international culinary contest!
- 125gr bread flour for kneading ( yellow durum wheat flour )
- 125gr all purpose flour
- 1 Tbsp olive oil
- 1 tsp salt
- 1 tsp baking powder
- 1/2 cup warm water
- 10 spring onions, finely chopped
- 1 small bunch fennel leaves or dill,finely chopped
- 1 1/2 cup parmesan cheese, grated
- olive oil
Put the flours, baking powder, olive oil and salt in an large mixing bowl.
Add half of the water and turn the mixture around with your fingers.
Continue to add water and start kneading with your hands until the mixture forms a rough dough.
Divide the dough into 16 small pieces. Cover with plastic wrap and let them rest until you make the filling.
In another bowl add spring onions, fennel leaves and parmesan. Stir to combine well.
Take one piece of the dough and using a rolling pin, roll it in a thin round. Fill it with 2 heaping tablespoons of filling and fold over to look like a half moon. Press the edges with your fingers and then with a fork to seal.
Continue with the rest of the dough.
Place the cheese pies in a pan lined with parchment paper.
Brush them with olive oil.
Bake them in a preheated oven at 180C for 20-25 minutes ot until golden.
Transfer the cheese pies in a plate and serve.
