- 200gr cherry tomatoes, halved
- a slice of watermelon cut in cubes
- 6 Tbsp olive oil
- 2 Tbsp white balsamic vinegar
- 2-3 Tbsp fresh mint chopped
- 1 dried chili pepper chopped
- 200gr feta cheese cut in cubes
In a large bowl whisk the olive oil, vinegar, chili pepper, fresh mint and a pinch of salt.
Add cherry tomatoes, watermelon and toss well. Let the mixture sit for 10-15 minutes.
Add feta, toss well and serve.
