1 leek chopped
1 carrot cut in small pieces
1 piece fresh ginger chopped
6 Tbs olive oil
1 small hot red pepper
1 clove garlic chopped
1 tsp salt
1 tsp curry
1 tsp ground coriander
1 tsp ground ginger
400gr peas, frozen
1 cup water
1 bunch swiss chard cut in pieces
juice of 1 lemon
juice of 1 orange
Heat the olive oil in a pot and saute the leek, the carrot and the ginger.
Add the pepper, the garlic and the spices. Saute for 2 minutes.
Add the peas, the water and bring to the boil. Reduce the heat and simmer for approximately 20 minutes.
Just before all the water is absorbed, add the swiss chard and the juices.
Continue to simmer for 5-10 minutes.
Serve warm with feta cheese on the side.
