Arakas Laderos (Greek style Peas)


ingredients
  • 1 kilo frozen peas
  • 3 spring onions chopped
  • 2 onions chopped
  • 3 carrots cut in slices
  • 5 potatoes cut in pieces
  • 1 red bell pepper chopped
  • 2-3 tomatoes pureed in a food processor
  • 1/2 bunch fresh parsley chopped
  • 1 cup olive oil
  • salt
  • pepper
  • water



instructions

Heat a little bit of olive oil in a pot and saute spring onions, onions and carrots.


Add peas, bell pepper, potatoes and stir.


Pour tomatoes, olive oil and enough water to cover the vegetables. Season with salt and pepper.



Cover the pot with the lid and boil in medium heat for 30 minutes. Add parsley and continue cooking until potatoes and peas are tender, left with olive oil. You might need to add some extra hot water during boiling.
Serve with greek feta cheese, olives and bread!

    If i decide to make it, can I skip or replace spring onion with something else?

      You can skip the spring onions or add one more small onion.
