- 5 leeks chopped
- a bunch of swiss chard chopped
- 500gr pumpkin chopped
- a bunch of chervil chopped
- 5-6 Tbsp chives chopped
- 250gr feta cheese crumbled
- 1 egg lightly beaten
- 6-7 sheets phyllo dough
- olive oil
Heat 5-6 Tbsp olive oil in a pot, add leeks and swiss chard and cook until soft. Add pummpkin, chervils, chives and pepper.
Remove pot from heat and add feta and egg. Mix well.
Preheat oven to 200C.
Brush a baking pan with olive oil. Layer 3 phyllo sheets, brushing each one with olive oil. Add pumpkin filling in an even layer.
Cover with 3 sheets brushing them with olive oil. Fold over the edges of the phyllo. Score the pie in pieces.
Bake at 180-200C for 45 minutes.
