Coconut cake with chocolate and banana

  • 320gr all purpose flour
  • 160gr brown sugar
  • 1 Tbsp baking powder
  • 1 tsp cinammon
  • 1/2 tsp salt
  • 70gr shredded coconut
  • 100gr chocolate chips
  • 100gr buttermilk
  • 2 eggs
  • 1 tsp vanilla extract
  • 150gr banana,mashed
  • 2 Tbsp orange zest
  • 100gr butter, melted

Preheat oven at 180C.
In a large bowl, sift together flour, sugar, baking powder, salt and cinammon.
Add coconut and chocolate.
In another bowl lightly beat the eggs with buttermilk and vanilla and add it to the coconut mixture.
Add banana, zest and butter and stir well with a spoon.

Butter and flour a cake form and pour in the batter.
Bake at 180C for 40-45 minutes.
