Brown Rice with Kale and Herbs

  • 2 onions chopped
  • 2 leeks chopped
  • 1 fennel bulb chopped
  • 200gr kale leaves
  • 100gr brown rice
  • 1 bunch dill chopped
  • 1 bunch parsley chopped
  • 2 carrots shredded
  • 330ml fresh tomato juice
  • 2 Tbsp tomato paste
  • 200ml olive oil
  • 1 tsp salt
  • pepper
  • 1 tsp sugar


In a large pot heat 2-3 Tbsp olive oil. Add onions, leeks, fennel bulb and cook until soft.
Chop kale and add it to the pot.

Stir in rice, dill, parsley, carrots, tomato juice, tomato paste, olive oil, salt, pepper and sugar.

Add 1 lt water to cover the veggies and simmer for 40 minutes with the lid on.

Check if the rice is fully cooked. I added one more cup of water and continue cooking for 10 more minutes.
