ingredients
- 1 cup portobello mushrooms, chopped
- 1 cup oyster mushrooms, chopped
- 1 leek, finely chopped
- 2 spring onions, chopped
- 2 slices bread, crumbed
- 1 egg
- 1/2 cup sparkling water
- 1 tsp baking soda
- 1 1/2 cup corn flour
- a lot of parsley, chopped
- salt
- pepper
- 2-3 Tbsp olive oil
instructions
Saute mushrooms and leek in olive oil.
Dissolve baking soda in sparkling water.
In a large bowl, add all the ingredients, mix well and make patties.
Preheat oven at 180C and line a tray with parchment paper.
Bake the mushrooms patties for 30 minutes.
Serve them with green salad and a dip made from yogurt, feta cheese and parsley!
