- 1000gr whole wheat penne
- 7 slices bacon, chopped
- 120gr butter
- 120gr flour
- 1 tsp smoked paprika
- 330ml beer
- 1,5 lt semi skimmed milk
- 500gr smoked cheese, grated
- 200gr mozzarella, grated
Cook pasta in salted water 2-3 minutes less than package directions.
In a pot, cook bacon over medium heat.
Add butter and when it starts to melt add flour, smoked paprika and stir.
Pour beer and stir until alcohol evaporates. Add milk, salt and pepper.
Stir constantly until it starts to bubble and thicken. Bechamel sauce will be a little bit fluid.
Remove from heat.
Add 400gr of smoked cheese and mozzarella and stir until melted.
Pour bechamel sauce over pasta and mix gently.
Cover with the rest 100gr smoked cheese.
Bake in a preheated oven at 200C for 20-30 minutes until golden.
