- 4 cod fillets (450gr total)
- 6 Tbsp olive oil
- 1 Tbsp turmeric
- 1 Tbsp cumin
- 1 tsp smoked paprika
- 1/2 tsp cinnamon
- 1 cup quinoa
- 1 1/2 cup water
- 1 onion, finely chopped
- 2 cloves garlic, finely chopped
- 1 small peperoncino
- 1 spring onion, finely chopped
- 1 lime
- 1-2 Tbsp pepitas
- fresh coriander
In a small bowl whisk together turmeric, cumin, paprika, salt, pepper and 4 Tbsp olive oil. Marinate the cod in it, while you cook quinoa.
Place quinoa in a fine-mesh sieve and run it under cold water for a few seconds. Let it drain.
In a skillet, saute the onion, garlic and peperoncino with the rest 2 Tbsp olive oil . Add quinoa and water and bring to a boil. Reduce heat to low, cover and simmer for 15 minutes. Then leave the quinoa on the side, uncovered for 5 minutes.
In a pan, cook the fish both sides.
Serve quinoa with the cod and garnish with spring onion, lime, coriander and pepitas.
