Banoffee cupcakes

ingredients for 24 cupcakes
  • 225gr butter, softened
  • 225gr brown sugar
  • 1 Tbsp vanilla extract
  • 1/2 tsp salt
  • 4 eggs, lightly beaten
  • 225gr self rising flour
  • 75gr dark chocolate, chopped
  • 24 tsps dulce de leche
  • 250gr cream cheese
  • 250gr mascarpone
  • 3 Tbsp powdered sugar
  • 60gr banana, cut in pieces

Preheat the oven to 180C.
Line the muffin trays with cases.
Beat the butter, sugar, vanilla, salt until well combined.
Add the eggs and the flour and continue to beat the mixture.
Fold in the chocolate.
Divide the mixture into the cases.
Bake for 15-20 minutes.
Leave them to cool.
Make a small hole in the center of each muffin and fill it with the dulce de leche.

Make the frosting by beating the cream cheese, mascarpone, powdered sugar and banana.
Use a piping bag to decorate the cupcakes, sprinkle with chocolate and add a small slice of banana.
