Spaghetti with Chicken and Peanut Butter Sauce



ingredients for 2 servings
  • 250gr spaghetti
  • 4 Tbsp sesame oil
  • 2 garlic cloves
  • 4 Tbsp peanut butter
  • 1/4 cup soya sauce
  • 3 Tbsp rice vinegar
  • 4 Tbsp brown sugar
  • 200gr chicken fillet
  • 1 Tbsp olive oil
  • salt
  • pepper
  • 1 spring onion thinly sliced




instructions

Boil pasta according to package directions. Drain and transfer pasta to a bowl. Toss pasta with 1 Tbsp sesame oil. In a food processor, add 3 Tbsp sesame oil, garlic, peanut butter, soya sauce, rice vinegar and brown sugar. Process until smooth.



In a pan heat olive oil. Season chicken with salt and pepper and cook for 6-7 minutes both sides. Cut chicken fillet in pieces.



Transfer chicken to the bowl with the pasta and pour some peanut butter sauce. Toss to coat. Try it and if you like add more sauce. Serve and garnish with spring onion slices.
