Quinoa with Turmeric and Cranberries

  • 1 Tbsp olive oil
  • 1 onion chopped
  • 1 clove garlic chopped
  • 2 tsp turmeric
  • 1 cup quinoa
  • 1 1/2 cup water
  • 1/2 cup cranberries
  • 2-3 Tbsp walnuts grated
  • 1 spring onion chopped
  • 5 Tbsp olive oil
  • 2 Tbsp lemon juice
  • 1 tsp honey
  • 1 tsp mustard
  • pepper
  • arugula

Heat olive oil in a pot and cook onion and garlic until soft. Add turmeric and quinoa and stir for 1 minute to toast the quinoa. Add water, bring to a boil, lower the heat, cover and simmer for 15 minutes. Remove the pot from heat and let stand uncovered until cool.
Add walnuts and cranberries and stir gently.
Arrange some arugula in a platter and add the quinoa. Garnish with spring onion.
Combine olive oil, lemon juice, honey, mustard and pepper. Drizzle over quinoa and serve.
