Black-Eyed Bean Salad


ingredients
  • 250gr black-eyed beans, dried
  • 2 spring onions, chopped
  • 1/2 bunch dill, chopped
  • 2 roasted red peppers from a jar, chopped
  • 100gr smoked eel (or smoked salmon, trout, tuna)
  • 4 Tbsp olive oil
  • 4 Tbsp vinegar
  • salt, pepper 


instructions

Boil beans until tender. Drain and set aside to cool.
In a bowl combine beans and the rest of the ingredients. Toss to mix.
