Peel potatoes and grate them. Put them in a colander and pat them dry.
Finely chop the onion.
Lightly beat the egg.
In a bowl, mix potatoes, onion, flour, egg, salt and pepper.
Heat a little bit of olive oil in a frying pan and drop tablespoons of the potato mixture.
With the back of the spoon press to flaten.
When the undersides are cooked and golden, turn the patties over and cook the other sides, too.
Serve them plain or with Blue Cheese Dip!
