Baked Salmon with Kale Salad and Sesame Oil, Garlic and Ginger Dressing

ingredients for salmon
  • 2 salmon fillets (125gr each)
  • zest from 1 lemon
  • 1 tsp thyme
  • 1/2 tsp sugar
  • 1 tsp salt
  • pepper
  • 2 tsp olive oil 

ingredients for salad and dressing
  • 1 bunch kale
  • fresh coriander
  • 1/3 cup olive oil
  • 3 cloves garlic
  • 3 Tbsp soya sauce
  • 2 Tbsp white balsamic vinegar
  • 2 Tbsp honey
  • 1 Tbsp sesame oil
  • 1 Tbsp ginger
  • juice from 1 lime


Preheat oven to 180C.
In a bowl combine lemon zest, thyme, sugar, salt, pepper and olive oil.
Rub salmon fillets with the mixture. 
Bake for 15-20 minutes.

To make the salad, wash kale and cut the leaves in small pieces. 
Finely cut fresh coriander and combine with kale leaves.
Puree all dressing ingredients in a food processor until smooth. 
Pour dressing over kale and coriander and mix well.

If you like, serve salmon with a horseradish sauce.
