- 200gr all purpose flour
- 100gr peanuts
- 100gr graviera greek cheese
- 1 Tbsp smoked paprika
- a bunch of fresh basil
- 1 Tbsp mustard with honey
- 1 tsp baking powder
- 1/2 tsp baking soda
- 5 Tbsp olive oil
- 3 Tbsp tomato paste
- 3/4 cup water
Preheat oven to 180C.
Line a 24x24 baking pan with parchment paper.
Grate the graviera. If you can't find greek graviera, substitute it with cheddar or pecorino.
Add peanuts in the food processor and finely grind them.
Finely cut the basil.
Dissolve tomato paste into 1/2 cup water.
Add all ingredients in a bowl and mix well with a spoon. Add the rest 1/4 cup water if you think the mixture in hard.
Don't add salt. Peanuts are very salty and so is the cheese.
Pour the mixture in the pan and spread it evenly.
Bake for 30-40 minutes.
Enjoy it plain or with feta cheese as a sandwich.
