- 150gr milk
- 1Tbsp butter
- 1 Tbsp flour
- 100gr parmesan cheese, grated
- 4 slices bread
- 2 tsp dijon mustard
- 2 slices smoked turkey ham (or other good quality ham of your choice)
- 50gr gruyere cheese, grated
- 2 eggs
Heat milk with butter until melted. Add flour whisking continuously until the sauce thickens. Add parmesan, pepper and whisk until the cheese melts. Set aside.
Line a pan with parchment paper. Lightly toast bread on both sides under the grill.
Spread mustard on two slices of bread.
Top with smoked turkey.
Arrange gruyere cheese over smoked turkey.
Place under the grill to melt the cheese.
Cover with the other two slices of bread. Top with bechamel sauce and bake under the grill until brown.
Fry the eggs in a pan with olive oil. Season with salt and pepper. Top baked sandwiches with the fried eggs.
