- 200gr durum wheat flour
- 100gr all purpose flour
- 1/2 tsp salt
- 2 tsp poppy seeds
- 1 tsp thyme
- 1 tsp oregano
- 1 Tbsp sugar
- 1 1/2 tsp dry yeast
- 200ml warm water
- 500gr feta cheese crumbled
- 6-7 green onions chopped
Pour warm water into a bowl. Stir in sugar and yeast until sugar dissolves. Let this stand for a few minutes.
In another bowl add the flours, salt, poppy seeds, thyme and oregano.
Add yeast mixture, stir and knead to combine all ingredients. Cover with plastic wrap and let it rise for 1 hour.
To make the filling mix crumbled feta cheese with chopped green onions.
Brush a round tart form with 28cm diameter with olive oil.
Divide dough in two portions. On a floured surface and with a floured rolling pin, roll one portion of dough into a circle, big enough to cover the bottom and edges of the tart form.
Add the filling and spread it evenly.
Roll the other portion of dough into a circle and cover the filling. Work with your fingers to seal the edges.
Use a fork to make small holes on the surface of the phyllo. Brush the pie with olive oil.
Bake in a preheated oven at 200C for 30-35 minutes.
