Beef Burgers with Horseradish Sauce

ingredients for 25 small burgers
  • 600gr minced beef
  • 2 medium onions minced in a food processor
  • 6 Tbsp horseradish sauce
  • 2 Tbsp thyme
  • 6 Tbsp oat rolled or steel cut
  • 1 egg
  • salt
  • pepper

ingredients for basmati rice with saffran
  • 500gr basmati rice
  • 900ml water
  • 5-6 saffran threads
  • 1/2 tsp turmeric
  • salt

ingredients for yogurt sauce and baked cherry tomatoes
  • 200gr greek strained yogurt 2%
  • 2-3 Tbsp horseradish sauce
  • fresh coriander or parsley chopped
  • cherry tomatoes
  • olive oil
  • thyme
  • salt

Place all the burger ingredients in a bowl.Combine and knead with your hands. Cover the bowl with plastic wrap and refridgerate for 1 hour. Make 25 small burgers and arrange them in a pan lined with parchment paper. Bake in a preheated oven at 200-220C for 15-20 minutes.

To make basmati rice with saffran,put rice in a strainer and rince under running water until it comes out clean. Let the rice drain. In a pot heat 3-4 Tbsp olive oil and stir fry the rice. Add the water and bring to a boil. Reduce heat and simmer for 12-15 minutes. When the rice has absorbed the water, remove from heat and leave it uncover to cool.

To make the yougurt sauce, mix yogurt with horseradish sauce and fresh coriander or parsley.

To bake the cherry tomatoes, arrange them in a single layer in a pan, drizzle with olive oil, season with thyme and salt and bake them for 10-15 minutes.
