- 1/2 kilo zucchini
- 1 onion, chopped
- 8 Tbs olive oil
- 1 tsp thyme
- chilly pepper
- 4 eggs
- 50gr gruyere cheese, grated
- 50gr parmezan cheese, grated
- 1 Tbs fresh anise, finely chopped
- 1 Tbs chives, chopped
Wash the zucchini and cut it in pieces.
In a baking pan, add the zucchini, the onion and the chilly and sprinkle with thyme and olive oil.
Bake at 180C for approximately 20 minutes.
In a bowl, whisk the eggs with the cheeses and the anise.
Pour the mixture in the pan with the zucchini, sprinkle with the chives and continue to bake until golden brown.
