Pizza with Kale, Feta Cheese and Quinoa Crust

ingredients for quinoa crust
  • 150gr quinoa
  • 1/4 water
  • 2 Tbsp olive oil
  • 1 tsp oregano
  • 2 Tbsp flour
  • 1 egg white
ingredients for toppings
  • 150gr greek kefalotyri cheese or pecorino, grated
  • 2-4 cloves garlic, chopped
  • 1-2 large handful kale drizzled with olive oil
  • 100gr feta cheese crumbled
  • red hot chilly pepper flakes (optional)


Place quinoa in a bowl with enough water to cover quinoa. Soak for 4-6 hours. When ready to make, drain through a sieve. Place drained quinoa, water, olive oil, oregano, flour and egg white in a food processor. Process until smooth. It will look like a pancake batter.
Line a pan 40x25cm with parchment paper and brush with olive oil. Spread quinoa batter and bake in a preheated oven at 220C for 10-15 minutes.

Remove from the oven, add kefalotyri or pecorino cheese, garlic, kale and bake for another 5-7 minutes.

Remove from the oven, top with crumbled feta cheese and red hot chilly pepper flakes and bake for another 5 minutes.
