- 1/2 kilo dried split peas from Santorini
- 1 1/2 kilo water
- 1 onion, chopped
- 1/2 cup olive oil
- spring onions, chopped
In a large pot add split peas and water.
Bring to a boil and skim off the foam.
Add the onion, olive oil, salt, pepper and continue cooking over medium heat until the split peas melt, approximately 45 minutes. Stir from time to time.
Serve and garnish with fresh spring onion, paprika, extra olive oil, lemon juice and toasted bread.
