- 200gr all purpose flour
- 1/2 tsp baking soda
- 200gr greek yogurt
- 2 Tbs ricotta cheese
- 80gr olive oil
- 2 egg whites
- 1 tsp thyme, dried
- 1 Tbs fresh basil, chopped
- 2 Tbs sun dried tomatoes, chopped
- 1/2 tsp pepper
- 50gr feta cheese
Preheat the oven to 200C.
Line the muffin tray with paper cases.
Put all the ingredients, except the sun dried tomatoes and the feta cheese, in a large bowl and mix well with a spoon.
Add the sun dried tomatoes and mix gently.
Pour the mixture into the muffin tins.
Cut the feta cheese in 12 pieces and put each piece on top of each muffin tin and press gently.
Bake for 20 minutes.
