- 150ml olive oil
- 2 onions (200gr)
- 2 garlic cloves
- 2 medium carrots
- 2 stalks celery
- 1 sweet potato white (360gr)
- 500gr lentils dried
- 2 tomatoes (500gr)
- 1 Tbsp tomato paste
- 2 lt water
- 2 tsp cumin
- 1 tsp curry
- 1/2 tsp thyme
- 2 bay leaves
- 1 orange, peel and juice
- 1/2 bunch parsley chopped
- 1 tsp salt
- 1/2 tsp pepper
instructions
In a food processor chop onions and garlic and transfer to a bowl. Mash tomatoes in the food processor. Cut celery and carrots. Cut sweet potato into cubes.
In a large pot heat 2 Tbsp olive oil and cook onions, garlic, celery and carrots until soft. Add sweet potato, lentils, mashed tomatoes, tomato paste, cumin, curry, thyme, bay leaves, orange peel, water, salt and pepper.
Bring to a boil, reduce heat and simmer for 35 minutes. Pour in olive oil and continue cooking for 10-15 more minutes. Check if the lentils are cooked or need more water.
When the lentils are done cooking, add orange juice and parsley. Stir and serve warm with some grilled sausage and whole wheat bread!
