Rice with Shrimps, Feta and Dill



ingredients
  • 200gr rice
  • 3-4 Tbsp olive oil
  • 200gr spinach frozen
  • 2 garlic cloves chopped
  • 500gr shrimps frozen, pre-cooked and peeled
  • 2 Tbsp dill chopped
  • salt
  • pepper
  • 300gr cherry tomatoes halved
  • 100gr feta cheese
  • parmesan grated



instructions

Thaw spinach and shrimps.
Cook rice according to package directions.
Heat olive oil in a wok and saute spinach with garlic.
Add shrimps and cook for 4-5 minutes until pink.
Season with salt and pepper and add chopped dill.
Add cooked rice, cherry tomatoes and stir.
Cook for a few minutes until cherry tomatoes are soft.
Remove wok from heat and add feta cheese in cubes.
Serve immediately and sprinkle with parmesan. 




* I used basmati rice but you can use whatever you like.
* The shrimps are pre-cooked and peeled  but you can use fresh as well.
