- 1 puff pastry
- 4-5 small zucchinis with flowers
- 100gr goat cheese
- 100gr sour cream
- zest from 1/2 lemon
- fresh lemon thyme
- olive oil
- lemon juice
- sea salt
instructions
Preheat oven to 180C.
Line the puff pastry in a tart dish 35x11cm, cut and discard the excess pastry.
Bake for 10-15 minutes.
Wash the zucchinis and finely cut them in slices.
Finely cut zucchini flowers, too.
Make the tart filling by mixing the goat cheese, sour cream, zucchini flowers, lemon zest, a few lemon thyme leaves and salt.
When the puff pastry is ready, take it out from the oven and set aside to cool.
Arrange the filling and cover with zucchini slices. Drizzle with olive oil.
Bake for 10-15 minutes.
Drizzle with 1-2 Tbsp lemon juice, garnish with lemon thyme and enjoy it!
