- 3 medium onions cut in slices
- 2 Tbsp olive oil
- salt, pepper
- 60gr bread crumbs
- 100gr parmesan cheese grated
- fresh thyme
- 4 eggs
Preheat oven to 230C.
Heat olive oil in medium heat. Add onions, season with salt and pepper, cover and cook for 10-15 minutes stirring occasionaly until the onions are soft.
In a bowl combine bread crumbs, parmesan and fresh thyme.
Sprinkle onions with half of this mixture. Make 4 holes with the back of a spoon and add the eggs.
Sprinkle eggs with the rest of the mixture.
Bake at 230C for 5 minutes and 1 more minute under broiler.
* if you don't have an ovenproof skillet, transfer cooked onions in a pan and continue with the recipe.
