ingredients for 18-20 sandwich cookies
- 200gr dark chocolate (72% cocoa)
- 140gr dark chocolate
- 40gr butter
- 2 eggs
- 140gr sugar
- 1 tsp vanilla extract
- 40gr all purpose flour
- 1/4 tsp baking powder
- 250gr mascarpone cheese
- 250gr cream cheese
- 2 Tbsp powdered sugar
- zest from 1 orange
instructions
Melt 200gr chocolate with butter in a sauce pan.
Chop 140gr chocolate.
Beat eggs, sugar and vanilla extract in the mixer with a whisk attachment for 10 minutes until pale and creamy.
Add melted chocolate with butter, flour, baking powder, chopped chocolate and mix with a spoon. Set aside for 10 minutes.
Preheat oven to 180C.
Line a pan with parchment paper and drop small tablespoons of the mixture.
Bake for 10 minutes until cracked. Let cool for 5 minutes in the pan and then tranfer to a wire rack to cool completely.
To make the filling, mix mascarpone, cream cheese, powdered sugar and orange zest.
Spread one tablespoon of the filling on underside of a brownie cookie and cover with another one to make a sandwich.
Place cookies in the refridgerator, covered with plastic wrap, to let the cream harden.
