ingredients for cake
- 350gr sugar
- zest from 2 oranges
- 2 eggs
- 70gr olive oil
- 110gr sour cream
- 1 tsp vanilla essence
- 220gr all purpose flour
- 65gr cacao powder
- 2 tsp baking soda
- 1 tsp baking powder
- 1/2 tsp salt
- 250ml buttermilk
- 6Tbsp orange juice
- 340gr dark chocolate
- 115gr butter
- 115gr sour cream
instructions
Preheat oven to 180C.
In a large bowl add sugar and orange zest. Rub between your fingers to wet sugar and release aromas.
Beat in eggs, olive oil, sour cream, vanilla.
Add flour, cacao, soda, baking powder, salt, buttermilk.
Beat until well combined.
Pour half batter in a 20cm spring form, lined with parchment paper lightly buttered.
Bake at 180C for 40 minutes. Let the cake cool for 5-10 minutes and tranfer it to a wire rack.
Do the same procedure with the rest of the batter.
Make a few holes with a fork on top of the cakes and brush on the orange juice so it soaks in.
It's better to chill the cakes overnight.
To make the glaze, melt butter and chocolate. Remove from heat and stir in sour cream. Allow to cool to thicken.
Spread a few tablespoons of the glaze on top of one cake, arrange the other cake on top and cover with the rest of the glaze.
Place the cake in the refrigerator until glaze has hardened.
Decorate with orange slices.
