ingredients for 30-35 fritters
- 1 kilo salted cod fish
- 1 cup flour
- 1 tsp baking powder
- 1 cup beer
- 5-6 Tbsp fennel leaves, finely chopped
- 1 egg
- 2 Tbsp ouzo
- pepper
- olive oil for frying
instructions
Put cod fish in a bowl and cover with water. Leave it for 24 hours in the refrigerator.
Change water every 3-4 hours to wash away the salt.
Drain and flake the cod very finely with your hands.
In a bowl mix the rest of the ingredients.
Add the cod and mix well.
Heat olive oil over medium-high heat.
Drop tablespoons of the mixture and fry them both sides to get a nice colour.
Place them in a plate with paper towel to drain excess olive oil.
We enjoyed the cod fritters with greek garlic dip and ouzo.
I also made a very tasty Beetroot salad from the blog Sundayspoon, a delicious Salmon Tart and a great greek meze Octopus Carpaccio from Kitchen Stories.
