- 250ml almond milk
- 40gr oat bran
- 3 dates pitted and chopped
- 1 banana cut in thin slices
- 1-2 Tbsp almonds chopped
- 1 Tbsp pumpkin seeds
- 1-2 tsp honey
Pour almond milk in a pot. Add oat bran, chopped dates and banana slices. Simmer over medium heat stirring occasionally until it thickens slightly. Serve in a bowl and garnish with almonds, pumpkin seeds, honey and cinnamon.
You can substitute almond milk with any other milk that you like. I tried it with apple instead of banana and it was delicious, too. You can add other nuts or spices like turmeric, ground ginger or cardamom.
If you like sprinkle half the banana slices with sugar and cook them in a pan to caramelise.
Make this breakfast the night before, put it in the fridge and enjoy it cold the next morning.
