Prosciutto Rolls with Arugula

  • 250gr arugula
  • 3 Tbsp olive oil
  • 2 tsp white vinegar
  • 2 tsp lemon juice
  • 1 tsp mustard
  • 3 Tbsp parmesan cheese grated
  • 10-12 prosciutto slices

Wash and dry arugula. Torn into pieces with your hands.
In a bowl whisk olive oil, vinegar, lemon juice, mustard and parmesan. Add arugula and mix well.
Put a small handfull of arugula in each prosciutto slice, roll and serve!
