Blueberry Muffins


ingredients for 18 muffins
  • 1/2 cup butter melted
  • 1 egg
  • 2 egg whites
  • 1 1/2 cup sugar
  • 3 cups all purpose flour
  • 3 tsp baking powder
  • 1/2 tsp salt
  • a pinch of soda
  • 1 cup milk
  • 1 tsp vanilla extract
  • 2 cups blueberries frozen


instructions 

Preheat oven to 200C.
Beat melted butter, sugar and eggs until creamy.
Add the rest of the ingredients except blueberries, continue beating until combined.
Sprinkle frozen blueberries with 2-3 Tbsp flour and mix gently.
Fold them into the muffin batter.
Grease and flour the muffin pans.
Divide batter between muffin cups.
Bake for 25-30 minutes at 180C - 200C.
Let them cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
