- 3 kilos potatoes
- 6 Tbsp olive oil
- 6 Tbsp butter
- 1 spring onion chopped
- 2 cloves garlic chopped
- red pepper flakes or pepper
- grated parmesan cheese
Peel the potatoes and cut them in thin slices.
Arrange them in a buttered baking dish.
Melt the butter, combine with olive oil and drizzle over the potatoes.
Sprinkle with the spring onion, thyme, oregano, garlic, red pepper flakes or pepper and salt.
Bake in a preheated oven at 200C for 2 hours.
While potatoes are baking, check if the potatoes are too dry and drizzle with some more olive oil or butter.
After 1 1/2 hours sprinkle with parmesan cheese and continue baking.
You can serve the potatoes with green salad and lamb pie.
