Cake with Chocolate, Pistachios and Pear

  • 200gr sugar
  • zest from 1 orange
  • 3 eggs
  • 200gr all purpose flour
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • a pinch of salt
  • 125gr butter melted
  • 1 pear grated
  • 50gr pistachios from Aegina chopped
  • 100gr milk chocolate chopped
  • 100gr dark chocolate chopped


Preheat oven to 180C.
Butter and flour a 34x10cm cake pan.

In a bowl add sugar and zest. Rub between your fingers to wet sugar and release aromas. Add egg lightly beaten and mix with a wire whip. Add flour, baking powder, cinnamon, salt, butter, grated pear and mix with the wire whip. 
Add pistachios and chocolates and mix gently with a spatula. Pour batter in the pan and bake for 40 minutes.

Allow the cake to cool in the pan for 5 minutes. Transfer to a wire rack to cool completely.
