- 100gr walnuts
- 60gr cranberries
- 60gr prunes
- 2 ripe avocados
- 3 Tbsp cacao powder
- 2 Tbsp olive oil
- 2 Tbsp honey
- 1 Tbsp cocoa nibs
- 1 Tbsp chia seeds
Place the walnuts, the cranberries and the prunes in a food processor and pulse until it begins to stick together.
Press into the bottom of a 22x24cm spring form or 4 smaller ones.
Place the rest of the ingredients in the food processor and mix until combined and smooth.
Spread evenly over crust and refrigerate overnight.
The next day, take out the mousse, sprinkle with cacao powder and garnish with fruits or marmelade.
