- 5-6 carrots
- 1 Tbsp olive oil
- 2 Tbsp honey
- 1 tsp cumin
- 1/2 tsp thyme
- 2-3 cloves garlic
- 1 lime, juice and zest
- salt
- pepper
- fresh coriander or parsley
instructions
Preheat oven to 180C.
Cut each carrot in 4 sticks.
Place them in a baking dish with the garlic cloves.
Combine olive oil, honey, cumin, thyme, salt and pepper.
Pour over carrots and mix until evenly coated.
Sprinkle with lime zest.
Bake for 20-30 minutes.
Pour over lime juice, garnish with fresh coriander and serve warm.
A very tasty side dish for fish or meat.
