Brownie with Cocoa, Cranberries, Red Wine and Chocolate Ganache


ingredients for brownie
  • 70gr dried cranberries
  • 70gr red wine
  • 250gr butter
  • 400gr sugar
  • 4 eggs
  • 100gr all purpose flour
  • 100gr cocoa powder
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 tsp vanilla extract

ingredients for chocolate ganache
  • 110gr red wine
  • 100gr heavy cream
  • 200gr dark chocolate



instructions

Preheat oven to 180C.
In a saucepan boil cranberries with red wine for 2 minutes. Set aside to cool completely.
In a pot melt butter with sugar. Remove from heat and let it cool. Add eggs and mix well. Add flour, cocoa, baking powder, salt and vanilla extract. Stir and mix in cranberries with red wine.
Pour the mixture in a 25x25cm pan lined with parchment paper.



Bake for 40 minutes at 180C.
Remove from pan and let it cool on a wire rack.




To make the chocolate ganache, boil red wine for 3-4 minutes until it reduces to 3 Tbsp.
Transfer it to a bowl. In the same saucepan gently heat heavy cream, add dark chocolate in pieces and the 3 Tbsp of red wine. Whisk until melted and combine. Place a piece of plastic wrap on the surface of ganache and let it cool completely.




Cover brownie with the chocolate ganache.




Allow the ganache to set for 1 hour.




Cut brownie in 16 pieces.
