- 2 Tbsp butter
- 1 onion chopped
- 350gr roasted red peppers from a jar, drained
- 2-3 cloves garlic chopped
- 1-2 dried chili peppers
- 70gr tomato paste
- 3-4 Tbsp parsley chopped
- 1/2 tsp smoked paprika
- 250gr spaghetti
- 250ml pasta water
- parmesan cheese
Melt butter in a sauce pan and saute onion until soft.
Add roasted red peppers and cook for a 3-4 minutes.
Add garlic, chili peppers, tomato paste and cook for 1-2 minutes.
Remove from heat and transfer the mixture in a food processor. Add parsley, smoked paprika, salt and pepper.
Cook pasta according to package directions.
Reserve 250ml of boiling water and add it in the food processor with the rest of the sauce mixture. Process until smooth and transfer sauce in the sauce pan.
Pour the cooked pasta in the sauce and stir gently.
Serve with more parsley and parmesan cheese.
